Smoked Oysters

Uncle George's Smoked Oysters


Boil oysters with juice 10-15 min. If not enough juice add water.





Drain and put into pint jars



Add to each jar:

1/2 tsp kosher salt 

5 shakes seafood seasoning

3 shakes nutmeg

1 tbsp Hickory Liquid smoke

3 drops hot sauce (I used Valentinas)

1 tsp soya sauce

top up with cooking oil (not olive oil)


Process 4 1/2 hrs water bath or 75 min pressure cooker (10 lbs pressure)






6 qts stewing oysters = 10 pints

10 qts stewing oysters = 16 pints


Canner will hold 8 pints
