Chia Seed Grape Jam
Grape jam has been a favorite for a long time but the last couple of years I need to cut back on my sugar intake ☹️
I have been researching like crazy knowing our concord grapes would be harvested soon! So this recipe is a total experiment for me and if you are adventurous in the kitchen like me give it a try and if you discover a tweek or two...let me know in the comments.
I am lucky that I have a steam juicer so after making my juice I pressed/strained the pulp to use in my jam. So whatever process you choose like cooking down the grapes and pressing from there is your choice. I have an extra jar of juice that I want to experiment with...perhaps more jam? Now I will post this at the end if it works the same.
2 c pressed/strained grapes
3 Tbsp honey (or to taste)
1 Tbsp chia seeds
Bring to a boil
grapes and honey
Add
chia seeds
Simmer aprox. 5 min you will notice the grapes begin to thicken as the chia seeds expand.
Fills 2 small jars (250 ml)
Now there are several discussions on whether to freeze or can. I am no expert and I have chosen to water bath. I have two jars leftover that didn’t fit into my canner so I think I will freeze these and see if there’s a difference. One thing is I don’t have a lot of freezer room!
***update*** there is not enough research available as to water bath your jam safely. So I moved my jars to the freezer. The aforementioned 2 jars never made it the freezer...already eaten! OMG...so good on ice cream!
