Bell pepper Casserole

This is a new one for us and is so delicious I have to share with everyone! This is similar to stuffed peppers but much better. The balance between the peppers and filling is amazing. 


Because the tomatoes are just ripening in the garden I made the sauce fresh. You could easily substitute with your favorite tomato sauce.


Fresh Tomato Sauce


Sauté 

1 c chopped onions

1 clove garlic finely chopped

1 chopped mild hot pepper include seeds

5 lb Roma’s slice in half (skins removed) aprox 8 c.


Simmer for 15-20 min adding the following herbs

1 tbsp Fresh tarragon 

2 sprigs thyme

1 Tbsp fresh basil 

Salt to taste


Casserole


Brown

1 lb ground pork/beef


Add 

1 c chopped onion

1 clove garlic finely chopped

1 jalapeño pepper seeds included

2 lg green peppers chopped into 1” cubes

1 1/2 c cooked rice

1 c corn

Salt to taste


Pour into casserole dish and top with tomato sauce. Sprinkle with Parmesan cheese and bake 40 min at 375° with lid on.
