Pear Salsa
Here’s another salsa! If you had asked me a month ago about combining pears and tomatoes I would have said you were crazy! We were at a fruit stand in Vernon on the weekend and the pears were amazing. The gal that was putting them out made a comment about pear salsa and I thought...ok...why not? With 263 lbs of tomatoes from the garden I gotta' use them somehow. I did make that chia peach hot pepper jam last week...Brent gulped (he's so brave) and I jumped in 😜
I have to admit I looked on Pinterest for ideas and didn’t really like all the ingredients that were being used so I have followed some recipes for the quantities and then made it my own.
5 lb Roma tomatoes (aprox 8 c) chop and drain
4 lg pears (6-7 c) pealed and diced
3 green peppers and 1 red pepper (3 c) finely chopped (used my mini chopper)
2 c onions
1/2 c mixed hot peppers (1 habanero, 7 cayenne, 2 Hungarian is what I used)
4 lg cloves garlic
3 Tbsp kosher salt
1/2 c Apple cider vinegar
1 can tomato paste
Add tomatoes and pears to a large pot. Bring to a boil and simmer.
Add rest of the ingredients as you chop.
Simmer another 20-30 min.
Pour off into jars and process.
Water bath 20-30 min.
