Split Pea Soup
Anything with tomatoes is a win for me! I remember growing up and thinking how yucky split pea soup looked. This recipe won me over and is a must whenever we cook a ham.
1 lb dry green split peas rinsed
7 cups water
1 ham bone
1 cup carrots coarsely chopped
1/2 cup onion chopped
1 tsp sea salt
1 qt. stewed tomatoes
1 green pepper diced
1 stalk celery diced
In a pot combine first 6 ingredients
Bring to a boil
Reduce heat, cover and simmer for 1 hr or until peas are tender
Remove ham bone and cut off meat
Discard bone
Process in blender or use a hand blender until smooth
Return to pot and stir in meat
Add untrained tomatoes, green pepper and celery
Simmer 15-20 min
Season to taste with salt and pepper
