Tomato Sauce

This recipe is more for myself as I change it every time I make it and it just is getting better and better! 

And the memory just isn’t what it used to be.  😁






I experimented with cooking down the tomatoes in a big pot on top of the stove. Then I tried the crockpot which was good if I was working outside of the home. In the end my favorite was roasting in the oven. I could put them into the oven and setting the timer to turn off after a few hours and leave the house if I had too! The taste was not much different from all methods.


15 lbs Roma tomatoes

2 lg onions cut into chunks

1 fist garlic cut into slivers

1/4 c fresh lemon juice

Salt to taste


Clean and cut tomatoes in half. Place in big roaster. 

Add onions, garlic and salt

Roast 350° for 3 hrs


Blend with a handheld blender.

Then put through a food mill (twice)





Simmer the sauce on stovetop for 1 1/2 hrs or desired thickness

Add lemon juice and add more salt if needed



Fill jars and process in water bath 30 min.


Makes aprox 6 qts
