Huckleberry Jam with Grand Mariner
This a very old recipe gleaned from Uncle George. We had a deal...he would pick the huckleberries and I would make the jam.
Back in the day it was acceptable to simply hot pack your jars and let them seal on their own. Today water bath is recommended so whatever way you process is up to you.
Combine in a lg saucepan
5 1/2 cups huckleberries (or blueberries)
1/2 c water & 2 Tbsp lemon juice
Stir in 7 c sugar
Let stand 10 min
Over high heat, bring to a full rolling boil & boil hard for 1 minute stirring constantly
Remove from heat
Immediately stir in 2 pouches Certo liquid fruit pectin & 1/4 c. Grand Marnier Liquer
Stir and skim 5 min to prevent floating fruit
Pour quickly into warm sterilized jars.
Makes 5 1/2 pints
