Garlic Scape Pesto
Garlic Scapes are the tops of garlic that grow into a curl. Reminds me of a the curly tail of a piglet. Need to harvest sooner than later or you could have stringy pesto (ask me how I know). The first time I made this we devoured the whole batch on crackers! We have no friends so this was not a problem 😉
Use in your favorite recipe or spread it on a cracker or pizza. The sky is the limit!
2 c garlic scapes (roughly chopped)
2 tsp sea salt
1 c olive oil
2 tsp lemon juice
Add scapes to blender and blend for a few minutes
Add lemon juice
Add salt and blend some more
Slowly add olive oil and blend until you are happy with the consistency
Freeze in ice cube trays
