Cheesecake Bars

Company’s coming! Quick I need an easy dessert! ...and can make ahead...and hopefully not eat it all before they come 🤪
This was the answer and a seasonal fruit topping to boot! So good I ended up making this again right away.



Cheesecake Filling


16 ounces (2 pkgs) cream cheese, softened

1/2 c monkfruit (or xyla) sugar

2 eggs

1/4 c sour cream

1 tsp vanilla extract

1/2 tsp Stevia vanilla (opt)


Crust


1 c graham cracker crumbs (1 sleeve)

2 Tbsp monkfruit (or Xyla) sugar

1/4 c melted butter


Instructions


Line an 8x8 square baking dish with foil. Lightly grease with butter.


Combine graham cracker crumbs, sugar and melted butter until all crumbs are moist.

Lightly press crumb mixture into prepared baking dish.


In a mixing bowl, beat cream cheese until smooth. Add in sour cream and sugar and beat again.


Add eggs, one at a time, to cream cheese mixture, beating well after each addition. 


Add vanilla extract(s) and continue to beat until smooth.


Spoon mixture on top of prepared crust, smoothing to completely cover crust.


Bake in a preheated 325 degree oven for 35-40 minutes, until center no longer wobbles and edges are just starting to turn golden.


Turn off oven.


Let cool completely in the oven with the door slightly open. This is to prevent any cracking.

 

Chill for at least 2 hours before serving. 


Goes really good with Strawberry Rhubarb Sauce  😋
