Strawberry Rhubarb Sauce
This is a great sauce that can be used over many different dishes like cheesecake, ice cream, pancakes....just to name a few!
Ingredients
4 cups sliced strawberries, diced rhubarb, raspberries combined
2 tbsp lemon juice
2/3 c monkfruit (or xyla) sugar, adjust based on your preference
¼ cup water
1 tbsp cornstarch
Instructions
Combine the fruit, lemon juice, sugar in a medium sized sauce pan.
Mix water and cornstarch and add to above.
Bring it to a boil and let it cook on low to medium heat for about 30 minutes, cook less or longer depending on how thick you want it.
The sauce can be served cold or warm.
Keep refrigerated.
