Cauliflower Casserole

Ingredients


1 medium size head cauliflower, cut into small florets 

1 teaspoon coarse kosher salt

1/4 teaspoon black pepper

1/2 cup yogurt (or sour cream)

2 tablespoons whole milk

1 teaspoon Dijon mustard

1-2 clove(s) grated garlic

Pinch cayenne pepper or hot pepper flakes

1 cup shredded cheddar cheese 

3 slices chopped cooked bacon

2 generous tablespoons thinly sliced scallions and the green tops


Instructions


Preheat oven to 425 degrees


Arrange the cauliflower florets on a baking sheet. Drizzle with extra virgin olive oil and season with kosher salt and black pepper. Roast the cauliflower until tender-crisp 12 minutes.


Meanwhile, in a 1.5 qt baking dish, mix the yogurt, milk, Dijon, garlic, cayenne/hot pepper flakes and 1/2 cup cheddar.


When cauliflower is done, add it to the yogurt sauce and mix to combine. 


Top with the remaining shredded cheddar, chopped bacon and scallions. 


Return to the oven and bake just until cheese is melted, about 10 minutes.
