Sourdough Rye and Guinness Bread

Oh my gosh! I have stumbled across the most fantastic bread recipe ever. 😍

This was so easy and turned out amazing. I meant to take a picture but I was too hungry. 

(Unfortunately this cook doesn’t like the taste of Guinness so the other half of the can went into the chili 😂)


Ingredients 


1 c warm water

2 tsp quick rise yeast

200 (224ish) fed sourdough starter (let rest 2 hrs)

1/4 c molasses

2 c rye flour

2 c bread flour (plus aprox 2 c more for later)

1 tbsp sea salt

1 egg

3 tbsp shortening (I used butter)

1 c Guinness beer


Method


Add to mixer in the order as above

Mix for a couple minutes

Add the extra flour (I used 1 c whole wheat and the rest was bread flour)

Mix until forms a ball (comes away from the sides)

Knead 7 minutes


Remove from mixer onto counter. Form a ball

Pour oil into a bowl and place dough top down and swirl the dough in the oil. Flip topside up. Cover and let rise for 1 hr (away from drafts)


Punch down and remove from bowl onto counter

Divide into 2, form into loaves and place in bread pans

Cover and let rise 40 min

Bake 375° for 25-30 min
