Everyday Sandwich Bread
Wet ingredients
2 1/2 c warm water
1 tbsp yeast
2 tbsp maple syrup
2 tbsp olive oil
1/3 c ground chia seeds
1/3 c whole psyllium husks
Dry ingredients
1 c sorghum flour
1 c millet flour
1 c tapioca flour
1/4 c coconut flour
1/2 c oat flour
1/2 c Teff flour
2 tsp sea salt
Method
In a 4 c glass measuring cup combine warm water, maple syrup and yeast. Whisk together. Let sit for aprox 5 min until foamy or bubbly.
Meanwhile mix all flours and salt in a large bowl.
When yeast is bubbly add chia seeds and psyllium husks. Whisk and let sit for 30 seconds! Whisk again and add to dry ingredients.
Mix until dough holds together. Add more water as this is rather dry. (Because of the coconut flour?) knead about 8 min
Form into a loaf and place in a lightly greased pan. Let rise for aprox. 1 hr.
Preheat oven 375° and bake for 55 min and let cool in the pan for 10 min. Then on a wire rack.
