Beef Jerky
I rediscovered beef jerky when we were in Maui. It’s one of those easy to pack snacks and is really good for my eating habits these days. The only problem with the commercial brands was the amount of sodium...like wow! When we got home from our trip I wanted us to try and make our own. So this is what we came up with. We tried both the dehydrator and the smoker...while we liked them both...we preferred the dehydrator.
4 lbs roast beef (used outside round)
Slice thin
Marinade
1/2 c soy sauce
1 Tbsp sesame oil
1 Tbsp liquid smoke
1 Tbsp Chinese cooking wine
1 Tbsp Worcestershire
2 Tbsp Montreal steak sauce
2 Tbsp garlic powder
Mix and pour over beef. Refrigerate overnight
Dehydrate at 150 for 4 hrs
or
Electric Smoker at 165 for 4 hrs - cherry chips and apple juice in tray
