Flour Blend

Here are a couple of flour blends that I have found to replace regular flour. Lovely in muffins and cakes! Substitute 1:1
You do need to add xanthum gum to keep it together somewhat! I think I may try chia or flax seeds next time...hmmm?!

Light Flour Blend


Note: my research indicates that this blend is higher in carbs


3 c brown rice flour

3 c white rice flour

1 1/2 c tapioca flour

1 1/2 c potato starch




Another Blend


1 1/12 c sorghum

1 1/2 c oat flour

3 c brown rice flour

1 1/2 c potato flour

1 1/2 c tapioca flour
