Cream Cheese Chaffles


These are gluten free, diabetes friendly. Great substitute for toast! We also substitute these for buns in Sloppy Joes. I like to triple the recipe and freeze them so always available when you need one!

INGREDIENTS


  • 3 Large Eggs
  • 4 Ounces Cream Cheese, softened
  • 1 Tablespoon monkfruit sweetner
  • 1 Teaspoon vanilla extract
  • ¾ Cup Mozzarella Cheese, shredded
  • 3 Tablespoons Coconut Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon salt


INSTRUCTIONS


  1. Preheat waffle maker to medium/high heat and spray generously with low carb non-stick spray.
  1. In a large mixing bowl, add eggs, cream cheese, sweetener, and vanilla and beat with a hand mixer or whisk until frothy.
  1. Add in mozzarella and beat until well combined.
    In a separate bowl, add flour and baking powder and whisk until mixed.
  1. Add dry ingredients to egg mixture and mix until just combined.
  1. Pour batter into preheated waffle maker and cook until brown on the outside – about 4 minutes
