Cream Cheese Chaffles
These are gluten free, diabetes friendly. Great substitute for toast! We also substitute these for buns in Sloppy Joes. I like to triple the recipe and freeze them so always available when you need one!
INGREDIENTS
- 3 Large Eggs
 - 4 Ounces Cream Cheese, softened
 - 1 Tablespoon monkfruit sweetner
 - 1 Teaspoon vanilla extract
 - ¾ Cup Mozzarella Cheese, shredded
 - 3 Tablespoons Coconut Flour
 - 1 Teaspoon Baking Powder
 - ½ Teaspoon salt
 
INSTRUCTIONS
- Preheat waffle maker to medium/high heat and spray generously with low carb non-stick spray.
 
- In a large mixing bowl, add eggs, cream cheese, sweetener, and vanilla and beat with a hand mixer or whisk until frothy.
 
- Add in mozzarella and beat until well combined.
In a separate bowl, add flour and baking powder and whisk until mixed. 
- Add dry ingredients to egg mixture and mix until just combined.
 
- Pour batter into preheated waffle maker and cook until brown on the outside – about 4 minutes
