Sugar Free Banana Bread


This recipe is adapted from my good friend, Jane. It’s her mom's recipe and yummy to boot! I needed to make it sugar and gluten free. So this is what I did. Hope you like it too. By the time I finished posting this we already finished one loaf 😊





Adapted from Maisie's Banana Bread

1/2 c butter

1 c. sugar replacement  (I used 1/2 c xylitol and 1/2 c swerve - note: use less xylitol or omit the swerve and use 3/4.c xylitol - too sweet!)

2 eggs, beaten

1 c. (3 bananas) mashed bananas

1 tsp. lemon juice ( I used my frozen lemon zest)

2 c. light flour blend (http://cookingwithheatrecipes.blogspot.com/2019/01/flour-blend.html)

1 tsp xanthum gum

1 tbsp. baking powder

1/2 tsp. salt

1/2 c. Pumpkin seeds


Cream sugar and butter.  

Add beaten eggs and bananas and lemon juice.  

Add dry ingredients.  

Add pumpkin seeds.  

Bake in greased loaf pan at 375 for 1 1/4 - 1 1/2 hours. (Small loaf pans for 45 min)
