Hot Pepper Chia Seed Jam
I can’t believe that I didn’t post this when I made these last Fall! Here it is January and I went looking for my recipe as we have run out. I'm playing with the thought that I should try and make some more as these were sooo good!
Next time I will be tempted to leave in some seeds as it could use a bit more heat or use a hotter pepper. The first recipe was hotpacked and sealed and then successfully kept in the fridge. The peach one never made it very far 😍
Hot Pepper Chia Seed Jam
1 c red & green chili peppers seeds removed
1/2 c Hungarian peppers seeds removed
1 c red pepper
Cut into 1” pieces and put into food processor
1 Apple cored and chopped small
3 Tbsp honey
1 c vinegar
Bring to boil and simmer for 15 min
Add 3 Tbsp chia seeds simmer for another 5 min
Makes 3 small jars
Peach Hot Pepper Chia Seed Jam
2 peaches (1 c chopped)
1/2 cayenne pepper and 1/2 Hungarian pepper seeds included (chopped finely)
1/4 red pepper (chopped finely)
1 Tbsp honey
1 Tbsp lemon juice
1 Tbsp Apple cider vinegar
Bring to a boil and simmer 15 min (Mash down if peaches are too thick)
Add 1 Tbsp chia seeds and simmer for another 5 min
Makes 1 small jar
