Rhubarb Muffins



What does one do when you don’t have enough oat flour and loads of rhubarb?



Mix:


1/2 c oil (or melted butter)

2 c Greek Yogurt 

4 eggs

1 c applesauce

1 c maples syrup 

2 tsp vanilla


Combine:


Flours -


2 c oat

1/3 c Sorghum 

1/3 c Coconut

1/3 Tapioca 

2/3 c Millet

2/3 c Teff


Add to flours:


1/4 c ground chia seeds

4 tsp baking powder

2 baking soda

1 tsp salt

2 tsp cinnamon


Combine dry ingredients with wet

Fold in 3 c chopped rhubarb and mix well


Bake 400° 30 min

Makes 12 large muffins
